Catering a major high stakes event on two days’ notice? Not something we usually would agree to, but this was a special case. The President of the Republic of Trinidad and Tobago was on an official visit to the United States. Having previously done several successful events for the Ambassador and His staff, Caribbean Caterers was hired to cater the reception.
The president proved to be an incredibly personable, engaging man who valued meeting and talking with every single guest. Our cocktail reception set-up was perfect for mingling, and we decked out the halls to make the room feel warm on a cold winter evening. Highlights of the menu included lamb lollipops, coconut shrimp, mini chicken roti, spinach balls, and cassava pone. While not wanting to make a habit of working on such short notice, the result this time was certainly worth the extra effort.
